The perfect low-FODMAP to-go snack for a busy week that tastes like Fall-in-a-ball.

Ingredients
  

  • 1 1/4 cups rolled or quick cooking oats
  • 1/3 cup 100% pure maple syrup
  • 1/3 cup nut butter
  • 1/2 cup pure pumpkin puree
  • 1/3 cup dairy-free chocolate chips
  • 1/2 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice or cinnamon

Instructions
 

  • Mix together all ingredients
  • Form into 12 balls (about 2" in diameter)
  • Refrigerate for 2 hours
  • Enjoy!
