Air Fryer Breakfast Potatoes | Low-FODMAP

You won't believe you made these crispy golden nuggets of deliciousness! They are reminiscent of cubed breakfast potatoes from an all-day breakfast place, you KNOW they are going to be good because that is all they do!

Equipment

  • 1 air fryer

Ingredients
  

  • 4 whole russet potatoes peel according to preference
  • 2 Tbsp garlic-infused oil e.g. olive, canola, or avocado
  • 2 Tbsp corn starch
  • 1 tsp paprika
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 sprays cooking spray

Instructions
 

  • Cut potatoes into 1" cubes. Use paper towel, or a clean kitchen towel, to pat off any excess moisture.
  • Add all ingredients, except cooking spray, into a bowl with a lid. Shake until the potatoes are coated with oil and seasoning.
  • Spray basket of air fryer with cooking spray and preheat to 400°F. Add potatoes to basket and set air fryer for 20 minutes at 400°F.
  • Remove basket half-way, at 10 minute mark, and shake. Spray potatoes with cooking spray and replace basket.
  • Continue frying for remaining 10 minutes. Enjoy!
